‘Sana’s Recipes’ Mug Brownies

Everyone loves a good mug brownie. They’re a quick and easy fix when you’re craving a midnight snack and pair perfectly with a scoop of vanilla ice cream. The hot and cold contrast really makes for a perfect dessert. These can also be made in a little ramekin cup in the oven if you’re worried that microwave timings are tricky, although that will take longer.

The measurements are approximate, but they are hard to get wrong so no need to worry if you’re not being exact.

Ingredients: 3 tbsp. butter, 1 tbsp. caster sugar, 2 tbsp. brown sugar, 1 large egg, ½ tsp. vanilla extract, 2 tbsp. unsweetened cocoa, 3 tbsp. self-raising flour (alternatively regular flour and a pinch of baking powder), pinch of salt, pinch of ground coffee, ½ tsp. ground cinnamon, 2 tbsp. Nutella (or chocolate chips if you prefer), splash of oil, vanilla ice cream (optional)

Take the butter, caster sugar and brown sugar and put them in a largish mug. Heat in microwave until butter is melted.

Take out and then keep stirring after each new ingredient – the egg, vanilla extract, unsweetened cocoa, self-raising flour (or regular with a pinch of baking powder), salt, cinnamon, coffee, Nutella (or chocolate chips).

Add a splash of oil if the mixture looks dry.

Once the mixture is smooth, microwave it on a medium heat setting and keep it in there for approximately 2 minutes (timings will differ for different microwaves so keep an eye on it, you can vary the consistency but personally I like it gooey and not slightly undercooked).

Pop a scoop of vanilla ice cream on top and dust with cinnamon and you’re good to go!
