Vegan Avocado, orange and Banana Muffins

Whether you breakfast on these zesty muffins or save them for your after-dinner dessert, veganuary knows no bounds when it comes to this all-purpose recipe. As a university campus of millennials, these avocado treats are sure to hit the spot. With no added sugar, pack full of nutrients and not to mention highly on-trend, kick-start Veganuary with these 4 easy-to follow-steps.

30 minutes, serves 6

 

Ingredients:

1 avocado (ripe and large)

1 banana (ripe and large)

¾ cup of all-purpose flour

½ cup of Orange Juice

 

Instructions:

1.) Preheat oven to 190 degrees. Grease the muffin cases with cooking-oil spray.

2.) Puree the avocado and banana. Add orange juice.

3.) Fold the flour into the combined wet ingredients.

4.) Spoon the mixture into the muffin cases. Cook for approximately 30 minutes until golden brown. Use a toothpick to see if the inside is ready. Put back into the oven if necessary.
